Fruit Muffins

Ingredients

  • One package LC-Muffin Mix
  • 1/2 to 3/4 cup low glycemic fruit such as cranberries, raspberries, strawberries or blackberries

Instructions

  1. Prepare LC-Muffin Mix as directed.
  2. Gently fold in fruit.
  3. Grease AND spray a muffin pan. Pour batter into tins, filling about 3/4 full.
  4. Bake at 375 degrees on a rack higher in the oven for 13-15 minutes or until slightly browned.
  5. Cool in pan 15 minutes before removing muffins to cooling rack.
