Ingredients:
- 1 yellow pepper sliced into strips
- 1 red pepper sliced into strips
- 1 green or orange pepper sliced into strips
- 1 small red onion sliced
- 1 pound boneless skinless chicken breast or thighs, sliced into strips
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Your choice of LC Tortilla Shells
- Low carb toppings of choice
Method:
- Preheat oven to 400°F.
- Slice the peppers, onions and chicken into strips.
- Spray a sheet pan with non-stick spray.
- Place the peppers, onion and chicken onto the prepared sheet pan
- Drizzle the olive oil and sprinkled all of the seasonings on top and stir until everything is coated well.
- Place it in the oven for 10 minutes then remove and stir.
- Place the sheet pan back in the oven for an additional 10 minutes or until the chicken has reached an internal temperature of 160°F.
- Meanwhile, assemble your favorite low carb toppings, such as lettuce, shredded cheese, avocado, and warm the LC Tortilla Shells.
- Assemble the fajitas using the warmed LC Tortilla Shells and toppings.
