This salad uses Italian dressing instead of mayonnaise, giving it a slightly tangy flavor. The recipe makes about 6 servings and approximately 3g net carbs per serving. It’s even better the next day after the dressing has soaked in the noodles. The olives are optional, so we topped our individual serving with a few. It’s so delicious!
Ingredients:
- 2 cups prepared LC Buttery Pasta Noodles (1/2 cup uncooked pasta)
- 1/2 cup grape tomatoes, halved
- 1/4 cup cucumber, diced
- 2 Tbsp sliced spring onion (green parts)
- 1/2 cup cubed cheddar cheese (use your favorite cheese)
- 1/3 cup sliced pepperoni
- 1/3 cup Italian dressing
- 2 Tbsp grated Parmesan cheese
- ¼ cup sliced olives (optional)
- 2 tsp McCormick’s Salad Supreme seasoning (optional)
Method:
- Cook noodles according to package directions
- Meanwhile, prepare other ingredients
- Drain the pasta in a colander and run cold water over it to cool it
- Transfer to a large mixing bowl and add the Italian dressing and mix
- Fold in all other ingredients until everything is well distributed
- Chill in the refrigerator for 1 hour
- Serve and enjoy!
