Low Carb Baked Beans with Bacon

Well, technically, they aren’t BAKED beans, but that’s a good thing, right? This recipe cooks on the stovetop, so no need to heat up the kitchen by turning on the oven.

This recipe makes about 4 servings, but can easily be doubled or tripled for a crowd. These low carb baked beans taste just like traditional Southern style baked beans, but without all the carbs. If you are a fan of baked beans, you’ll love it!

Ingredients:

  • 1 can LC Non-GMO Organic Black Soybeans
  • 4 slices bacon, cut into 1” pieces
  • ½ cup chopped onion
  • 1-2 teaspoons LC Brown Sugar Sweetener-Inulin
  • 1 Tablespoon prepared yellow mustard
  • 1 Tablespoon no sugar added ketchup (such as Heinz)
  • 1 Tablespoon no sugar added barbeque sauce (such as Ray’s)
  • A few drops of liquid smoke (optional)
  • ½ teaspoon salt (or to taste)

Method:

  1. Open the can of beans and drain most of the liquid out, but do not rinse them.
  2. Cut the bacon slices into squares.
  3. Preheat a skillet on the stove over medium heat and add the bacon, separating the squares and cook until the fat has rendered and it becomes crispy. Once the bacon is crisp to your liking, remove from pan and drain on a paper towel.
  4. Slightly wipe the pan, leaving most of the bacon grease, and add the chopped onion. Saute the onion until it has softened.
  5. Add the beans to the skillet and stir to combine.
  6. Add the remaining ingredients, except for the bacon, and stir to combine. Let the beans simmer for about 10 minutes.
  7. Stir in about half of the cooked bacon and turn off heat.
  8. Transfer to a serving dish, top with the rest of the bacon, serve and enjoy!

Recipe Notes:

  • If you like your baked beans sweeter, add a little more LC Brown Sugar Sweetener.
  • Steps 7 and 8 are optional. If you don’t want to mess up another dish, go ahead and toss all the crispy bacon in, stir, and serve right out of the pan!
