Ingredients:
Crust:
- Your favorite LC Pizza Shells (6” Personal Size, 12” Thin Crust or 12” Thick Crust)
Sauce:
- 1 can no sugar added tomato sauce
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
If you are short on time, you could also use store-bought, no sugar added pizza sauce, such as Rao’s, but if you have time, give our sauce recipe a try – you’ll love it and it’s super easy!
Suggested Toppings:
- 2 cups shredded full fat mozzarella cheese
- 1 cup sliced pepperoni or other keto-friendly meats
- 1 cup grilled or sauteed vegetables such as zucchini, bell peppers, eggplant
- 1/2 cup sliced black olives
- 1/4 cup crumbled feta or goat cheese (optional)
- Fresh basil
Make it your own and substitute your favorite low carb and keto pizza toppings! Be sure the meats are fully cooked before topping the pizza, and it’s best to pre-cook the vegetables.
Method:
Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled.
Prepare the Sauce:
- In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and saute until fragrant, about 1-2 minutes.
- Stir in the tomato sauce, oregano, basil, salt and pepper. Simmer for about 10 minutes, stirring occasionally. Remove from heat and let it cool slightly.
Grill the Pizza Crust:
- Lightly brush olive oil on one side of your LC Pizza Shells. Place them on the grill, oil side down and lightly brush the other side with olive oil.
- Grill each side for 2-3 minutes until they are slightly charred and crispy. Watch closely to avoid burning. Remove them from the grill and place on a clean work surface.
Assemble the Pizzas:
- Spread a layer of the pizza sauce over the top of each crust.
- Add a generous amount of shredded mozzarella cheese and the rest of your choice of toppings.
- Carefully place the assembled pizzas back on the grill. Close the lid and cook for 5-7 minutes (watch closely).
- When the cheese is all melted and bubbly, remove and allow to cool for a few minutes.
- Garnish with basil, arugula or your favorite herbs, slice and enjoy!
Why It’s Perfect for Grilled Pizza Night:
- Smoky Flavor: Grilling the pizza adds a unique, smoky flavor that can’t be replicated in an oven, making it a standout dish.
