Dickens of a S’mores Bars

Ingredients

  • 1 cup LC-Granola and Cookie Bites mix (or ground nuts)
  • 2 tablespoons water (omit if using nuts)
  • 2 tablespoons butter, softened
  • 1 large box sugar-free chocolate pudding mix
  • 13/4 cups coconut milk
  • 1/2 cup heavy whipping cream
  • LC-Marshmallow Fluff mix (or sweetened, whipped cream)

Instructions

  1. For bottom layer: mix LC-Granola and Cookie Bites mix with water and butter. Spread into the bottom of an 8×8 pan. Bake at 350 degrees for 30 minutes. Cool in the fridge.
  2. For the pudding layer: mix together the pudding mix, coconut milk and cream until thickened. Measure out 3 cups and spread over bottom layer. Refrigerate for an hour, until firm. Cut into squares.
  3. For topping: Prepare fluff as directed on the package. Allow fluff to solidify slightly in the fridge, about 20-30 minutes.
  4. Spoon fluff onto cut bars. Serve immediately. Refrigerate leftovers.
