Low Carb Buffalo Chicken Pizza
Ingredients:
- 1 LC Thick Crust Pizza Shell or LC Thin Crust Pizza Shell
- 1 Rotisserie Chicken, pull the meat off
- 2 cups Shredded Mozzarella Cheese, divided
- 1/2 cup Blue Cheese Crumbles
- 1 cup Buffalo Wing Sauce, divided
- 1/4 cup chopped red and green onion
- Olive Oil
- Salt
- Pepper
- Garlic Powder
- Parsley
Method:
- Drizzle olive oil on the edge of the pizza shell where your crust will be
- Sprinkle seasonings: salt, pepper, garlic powder and parsley
- Spread 1/4 cup buffalo wing sauce over the interior of the pizza shell
- Sprinkle 1 cup shredded mozzarella over the pizza shell
- In a bowl, combine shredded chicken with 1/2-3/4 cup buffalo wing sauce, depending on how much chicken you have
- Season with salt, pepper, garlic powder and parsley
- Mix to combine
- Spread chicken mixture over cheese
- Top with more shredded mozzarella
- Bake in the top rack of the oven at 375 for 15 minutes
- Remove from the oven and sprinkle blue cheese crumbles and chopped red and onions
- Drizzle with extra buffalo sauce
