Low Carb Cheesy Broccoli Bake

A cheesy casserole topped with low carb bread crumbs!

Ingredients:

  • 2 – 12oz packages frozen broccoli spears
  • 4 Tbsp butter, separated
  • 2 Tbsp LC Thick’n Saucy
  • 1 1/2 cups heavy cream
  • 1 1/2 cups chopped or shredded sharp cheddar cheese
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • 1/4 tsp paprika
  • 3/4 cup LC Seasoned Bread Crumbs, reserve 1/2 cup

Method:

  • Preheat oven to 350
  • Cook broccoli according to package instructions- take care to not overcook
  • Drain broccoli and pour into a 13×9″ casserole dish
  • Sprinkle 1/4 cup LC-Fresh Baked Seasoned Bread Crumbs over the broccoli
  • In a large saucepan, melt 2 Tbsp butter
  • Add 2 Tbsp LC-Thick n Saucy and stir to make a roux
  • Slowly pour in the cream, whisking until thickened
  • Add chopped cheese and spices; stir until cheese is melted
  • Pour cheese sauce over broccoli
  • In a small pan, melt 2 Tbsp butter
  • Add 1/2 cup LC-Fresh Baked Seasoned Bread Crumbs and stir until browned
  • Pour on top of cheese and broccoli mixture
  • Bake for 30 minutes
