Low Carb Cheesy Broccoli Bake
Ingredients:
- 2 – 12oz packages frozen broccoli spears
- 4 Tbsp butter, separated
- 2 Tbsp LC Thick’n Saucy
- 1 1/2 cups heavy cream
- 1 1/2 cups chopped or shredded sharp cheddar cheese
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp chili powder
- 1/4 tsp paprika
- 3/4 cup LC Seasoned Bread Crumbs, reserve 1/2 cup
Method:
- Preheat oven to 350
- Cook broccoli according to package instructions- take care to not overcook
- Drain broccoli and pour into a 13×9″ casserole dish
- Sprinkle 1/4 cup LC-Fresh Baked Seasoned Bread Crumbs over the broccoli
- In a large saucepan, melt 2 Tbsp butter
- Add 2 Tbsp LC-Thick n Saucy and stir to make a roux
- Slowly pour in the cream, whisking until thickened
- Add chopped cheese and spices; stir until cheese is melted
- Pour cheese sauce over broccoli
- In a small pan, melt 2 Tbsp butter
- Add 1/2 cup LC-Fresh Baked Seasoned Bread Crumbs and stir until browned
- Pour on top of cheese and broccoli mixture
- Bake for 30 minutes
