Ingredients:
Crust:
- 1 package LC Yellow Cake Mix
- 1stick of butter, melted
- 1 egg
- 1 tsp lime zest
Filling:
- 1 8 oz cream cheese, softened
- 2-1/4 cups LC Confectionery Powdered Sweetener-Erythritol
- 2 eggs
- 1/4 cup fresh lime juice
- 1 Tbsp Tequila (optional)
- 1 tsp vanilla
- 1 tsp lime zest
Method:
- Preheat oven to 350 degrees F.
- Line an 8×8 baking dish with foil or parchment paper and spray with non-stick cooking spray.
- In a medium bowl, mix the LC Yellow Cake Mix, melted butter, egg and 1 teaspoon lime zest until combined.
- Press the mixture into the bottom of the prepared baking dish to form a crust.
- Using an electric mixer, beat the softened cream cheese, LC Confectionery Powdered Sweetener-Erythritol, vanilla, lime juice, tequila (if using), eggs and lime zest. Mix until creamy, about 3-4 minutes.
- Pour the mixture over the crust and bake for 40-45 minutes. The edges will be slightly brown and center might appear not set.
- Remove from the oven and let cool for 20 minutes.
- Dust the top with more LC Confectionery Powdered Sweetener if desired.
- Slice into squares and enjoy!
- Wrap leftovers in plastic wrap and place in the refrigerator.
