Low Carb Pasta with White Cheddar Cheese Sauce, Broccoli & Bacon

This quick and easy one pot dish is so versatile! Enjoy it as a side dish or add your choice of cooked protein, such as chicken or beef and make a meal of it. Feel free to substitute another low carb vegetable for the broccoli or omit the vegetable and serve it with a side salad for a delicious and satisfying meal.

Ingredients:

  • ½ package (about 1 cup) of uncooked LC Buttery Pasta Noodles
  • 1 package of fresh or frozen microwavable broccoli florets)
  • 4 slices of bacon, cooked and crumbled OR packaged real bacon bits
  • ½ cup heavy cream
  • ½ cup reserved pasta water
  • 4 Tablespoons unsalted butter
  • 1 cup Land ‘O Lakes White Cheddar Cheese Powder
  • 1 tsp. Thick ‘n Saucy or Xanthan Gum, optional
  • Shredded cheese, optional for topping
  • Salt and pepper to taste

Method:

Bring a large pot of water to boil and add the LC Buttery Pasta Noodles. When the water has returned to a boil, cook about 3 minutes. Drain the noodles, reserving about ½ cup of the pasta water.

Meanwhile, microwave the broccoli florets per package directions on the lower end of the cooking time since it will cook slightly more in the preparation.

Turn the heat on the burner to low. Return the pasta to the pan and add the butter, cream and reserved water.

Add the cheese powder, a little at a time, while gently stirring until all ingredients are well combined and you have the desired consistency. If you prefer a thicker sauce, add a little more cheese powder or 1 tsp. Thick ‘n Saucy or Xanthan Gum. If it is thicker than you prefer, add a little more cream.

Turn off the heat and gently fold in the desired amount of broccoli, bacon bits and salt & pepper to taste. Serve right out of the pot or transfer to a small baking dish and top with optional shredded cheese.
