Ingredients
Pumpkin Cookies:
- 1 1/4 c. LC-Pumpkin Cookie Mix
- 5 Tbsp butter, melted and slightly cooled
- 1 egg, beaten
- 1 tsp vanilla extract
- 5 Tbsp canned pumpkin puree
Cream Cheese Frosting:
- 1/4 c butter, softened
- 4 oz cream cheese, softened
- 2 c Low Carb Confectionery Powdered Sweetener
- 1 tsp vanilla extract
Instructions
For the cookies:
- Follow instructions on the package of LC-Pumpkin Cookie Mix
- Separate prepared dough into 8 equal spoonfuls and bake according to package instructions
For the filling:
- Using an electric mixer, blend the cream cheese and butter until smooth
- Add powdered sweetener and vanilla extract, blend until well combined
Assemble whoopie pies with 1 Tbsp cream cheese frosting between 2 pumpkin cookies
